Olive Coat

What to give to help condition of fur/coat?
I've heard several people say stuff about giving certain foods to improve the condition of a dog's skin/coat. I've heard people giving eggs or olive oil. What exactly does eggs or olive oil do for the coat? What else/other foods can help improve it?
Ok, so, since eggs are good, as well as olive oil & sardines, if I were to make him an omlette with all those, would that help? What else should I put in it? How often should I give him this stuff? Once a week, once a month, etc?
High quality dog food helps the coat a lot.
If you're looking for something to add, I add salmon oil to my dog's food. It has omega acids that are very good for the skin and coat.

ADD:
I wouldn't recommend making an omelette. That's a lot of different food in one sitting that the dog isn't used to eating, which can lead to vomiting and diarrhea.
Egg should only be given once a week. (1 egg per week)
Sardines can be given either several times a week or even daily if you would like and it doesn't exceed 10% of the dog's total diet.
Salmon oil or olive oil can be given daily. (1 teaspoon for a 40 pound dog).
